A favorite among green bean lovers everywhere, Blue Lake Green Beans are famous for their wonderful, “beany” flavor and smooth, string-less texture. They are known for retaining that flavor and texture when they are canned or frozen. Ocean Air Farm (Ft. Dick, CA) and Lehne Farms LLC (Roseburg) both grow them using organic practices, and the beans will come from one or the other farm, as shown above.
Green beans are a good source of carbohydrates, weighing in at around 10 grams in a cup of simply cooked beans. These carbs come in a healthy package that includes high percentages of your daily value of vitamins A, C, and K, folate, and manganese.
Store unwashed fresh beans in a reusable container or plastic bag in the refrigerator crisper. Whole beans stored this way should keep for about seven days. You can also freeze your fresh green beans – without blanching! Just trim the ends off, chop into desired sizes, wash them and freeze!
