Elephant Garlic is actually a member of the onion family, a variant of the leek. Compared to hardneck garlic, Elephant Garlic produce supersized heads (up to 4-6”) with very few cloves – on average, three or four – and has a sweet, mellow onion/garlic flavor and a similar look to garlic…hence the name. One of it’s main selling points is that Elephant Garlic can be used raw, since it doesn’t have the intense hot bite of a standard garlic clove.
Grown by High Prairie Farm (Brookings), using organic practices. Sold by the pint, averaging about 1/2 lb., or 2 heads per pint. Elephant Garlic will keep in storage for as long as 10 months in a hanging basket or on a counter. Peeled cloves keep in the refrigerator for a month, and the entire bulb can be frozen and kept in the freezer for an additional 6 to 8 months.
