Spencer Steak is a West coast term for boneless rib-eye steak. It also goes by the names Delmonico, beauty steak, market steak and Scotch fillet.

Spencer Steak is cut from a prime rib, and often has the large areas of fat removed, so it can be leaner than some rib-eye steaks.  There really isn’t a difference between a rib-eye and a Spencer steak – both are two of the best cuts of steak you can buy, with much more flavor than filet mignon while being more tender than a sirloin steak.

These organic, grass-fed, Spencer Steaks are nearly 2 inches thick (the best Spencer Steaks are at least 1-1/2 inches thick) and 2.5 to nearly 3.5 lbs. each.
