Description
This purple skin, yellow flesh variety was first tested at Valley Flora Farm for Oregon State University as part of their dry farm field trials. It has fantastic flavor (per farmer Zoe) and is very versatile – useful for baking, mashing, frying, etc.
Store your potatoes in a cool, dry, dark place (your pantry works) preferably in a mesh or paper bag. (Note: too much light or moisture can cause your potatoes to get green spots or sprout.) These potatoes are NOT treated for storage, so plan to use them within a month or so. Grown using organic practices.
