Another product coming out of the partnership between Palmer Westbrook Ranch and Taylor Sausage in Cave Junction, OR, is Beef Summer Sausage. The flavor is a combination of brown sugar, smoke flavoring and celery, and OtterBee’s carries it in 8oz. sticks as of 2023.
The beef is, of course, Oat Hill Organic Beef – certified organic by CCOF, grass fed AND grass finished, and locally raised in Smith River, CA with no antibiotics and no added hormones. The processing is done by Taylor Sausage in their Cave Junction conventional processing plant. So, while we can’t call this beef sausage stick “organic”, rest assured it IS made with 100% certified organic beef.
Ingredients: certified organic beef, sea salt, contains 2% or less of the following: brown sugar, glucono delta lactone, natural smoke flavoring, cultured celery powder.
