Minestrone Bean Soup Mix is a hearty soup with a tasty pesto herb blend, and can be prepared with our without meat. The soup freezes well and can thaw and reheat in just minutes. Note: Recipe included on each package – see below.
- Ingredients: dried mixed beans (kidney, pinto, navy, black eyed, Great Northern, baby and large lima, garbanzo, black and small red beans, green and yellow split peas, lentils); Herb packet (garlic, onion, mixed herbs and spices)
Minestrone Bean Soup Recipe
1 pkg. Minestrone bean soup mix (10 oz.)
2 quarts water
1 cup diced ham or turkey ham
2 carrots, diced
2 stalks celery, diced
4 fresh mushrooms, sliced
15 oz. can tomato sauce
1 teaspoon salt
1/2 cup macaroni
Fresh ground pepper to taste
Directions: Remove herb packet from soup mix; set aside. Soak beans for at least four hours or overnight in water. Drain; add two quarts water. Bring quickly to boil and cook for 30 minutes. Add remaining ingredients, except macaroni. Simmer for 45-60 minutes until beans are tender, adding water if necessary.
Add macaroni; cook an additional ten minutes. Ladle into soup bowls and top with grated Parmesan cheese if desired. Makes 8-11 cups. (Crockpot Method: soak beans overnight and drain. Add above ingredients and slow cook for 8-12 hours until beans are tender.)
