These Spaghetti Squash are on the smaller size, with yellow skin and sweet, spaghetti-like flesh. Each averages about 3 pounds, perfect for two people! Grown by High Prairie Farm (Brookings) and Valley Flora Farm (Langlois), and coming to you from one or the other, as specified above. Both farms grow using organic practices. Spaghetti squash will keep in a cool, dry spot for 3-4 months.
The oddball of the squash family, Spaghetti Squash gets its name because its flesh turns into long spaghetti-like shreds once baked. The best way to serve it is to shred it with a fork and serve as a base for low-fat pasta sauces in the same way as spaghetti. Or, get creative with one of these Spaghetti Squash recipes!
