Serrano Peppers, from High Prairie Farm (Brookings), are typically eaten raw and have a bright and biting flavor. (The Scoville rating of the Serrano pepper is 10,000 to 23,000 – notably hotter than a Jalapeno, but not near as hot as a Habanero).

Serrano peppers are also commonly used in making pico de gallo and salsa, as the chili is particularly fleshy compared to others, making it ideal for such dishes. Grown using organic practices, and sold by the count instead of by the pound (meaning each order nets you six peppers).
