Norm Lehne Garden & Orchards (Roseburg) thins their Walla Walla onion beds about this time of year, then bunches the thinnings – the “spring” onions – to sell at their farm stand, through their CSA…and to us!
These will look a little like large scallions, but they’re actually baby Walla Wallas with the tops attached. These are “fresh” spring onions (versus “cured” onions, which are dried, without the tops).
You can treat these just like a bunch of scallions, i.e. store them in the fridge and use them within a few weeks, max. Grown using organic practices.
