Description
High Prairie Farm thins their onion beds about this time of year and bunches the “thinnings” at two medium sized onions to a bunch. These are “fresh” onions, a mix of yellow and white, with green tops (versus “cured” onions, which are dried, without the tops).
Raw, they have a bit of a bite to them, but cooked, they sweeten up, according to farmer Shani. Because they’re not yet cured, they should be stored in the fridge (or you can hang them to dry, then remove the tops and store in the pantry…) Grown using organic practices.
