You might be familiar with Fava Beans, but did you know that the Greens are edible too?
Valley Flora Farm (Langlois) offers their organically-grown Fava Greens in an 8oz. bunch. According to the farm, these “tender, young fava greens are delicious sauteed or turned into pesto, with a fresh, delicate, nutty flavor.”
To store, wrap the stems in a damp paper towel, then place the bunch in a plastic bag. This will keep it fresh for a day or two. Alternatively, you can store Fava Greens like a flower bouquet, in a glass of water in the fridge.
