High Prairie Farm (Brookings) grows a variety of eggplants, including Japanese Eggplant (which vary from light to medium dark purple) and a type known as Italian Long Purple. These heirloom varieties are thought to have originated in Japan, and are considered very flavorful and tender, as well as being thin-skinned and easy to cook. Naturally grown, using organic methods, and available by the pound, at an average of 3-4 per pound.
