Description
High Prairie Farm (Brookings) grows an Asian Eggplant, the color of which vary from light to medium dark purple. This heirloom variety is thought to have originated in Japan, and is considered very flavorful and tender, as well as being thin-skinned and easy to cook. Naturally grown, using organic methods, and available by the pound, at an average of 3-4 per pound.
