A classic pickling cucumber size, Salt & Pepper Picking Cucumbers are a favorite cucumber for fresh snacking with a size, texture, and unique color that also make them a great addition to any pickle batch. Grown by High Prairie Farm (Brookings) using organic practices; harvested the day before you get them.
3-5″ fruits pack an impressive sweetness and crunch. Chefs, csa members, and market customers love its flavor and thin skin that lacks the bitterness of the standard grocery store cucumber. Salt & Pepper is named for the miniature black spines that dot the white & pale lemon fruits, but don’t be fooled: they’re tiny and you’ll barely notice them. Cucumbers for pickling refer to cucumbers that are used for processing or making pickles. This doesn’t mean they can’t be eaten fresh, but their thinner skins, crunchy texture and smaller seeds make them ideal for pickling. Asian Cucumber Pickles
2 medium cucumbers, thinly sliced
¼ cup Rice Wine Vinegar
1 TBS Sesame Oil
1 tsp Olive oil
2 TBS Sugar
1 TBS Soy Sauce
1-2 TBS Sesame Seeds (optional)
¼ tsp chili flakes (optional)
1 green onion, thinly sliced (optional)
Mix vinegar, oils, sugar, soy sauce and sesame seeds together. Mix into cucumbers and optional add ins.
Let marinade for 2 hours, then enjoy.
