Harvest Vegetable Bean Soup Mix is ready to combine with fresh produce for a wonderful vegetarian lovers’ soup. The soup freezes well and can thaw and reheat in just minutes. Note: Recipe included on each package – see below.

  • Ingredients: Dried mixed beans (kidney, pinto, navy, black eyed, Great Northern, baby and large lima, garbanzo, black and small red beans, green and yellow split peas, lentils); Herb packet (mixed herbs and spices)

Harvest Vegetable Soup Recipe

1 pkg. Harvest Vegetable bean soup mix (10 oz.)
3-1/2 cups vegetable broth
2 cups water
2 diced tomatoes (or one 15 oz. can diced tomatoes)
1 medium onion, chopped
1 carrot, diced
2 stalks celery, diced
1 green pepper, diced
1 clove garlic, minced
1 teaspoon salt (optional)

Directions: Remove herb packet from soup mix; set aside. Soak beans for at least four hours or overnight in water. Drain and add vegetable broth and water. Bring quickly to boil and cook for 30 minutes. Add remaining ingredients, including contents of herb packet. Simmer for 45-60 minutes until beans are tender. Add water if necessary. Makes 8-11 cups. Note: other garden vegetables such as cabbage, zucchini, or potatoes can be added for additional flavor. (Crockpot  Method: soak beans overnight and drain. Add above ingredients and slow cook for 8-12 hours until beans are tender.)
