You’ve probably had spinach dip, but ever think about doing it with Swiss Chard? This fun twist on the standard Spinach Dip comes to us from the farmers at Ocean Air Farm: a great way to use up the bounty of chard that we usually see by mid-summer…
INGREDIENTS
1 bunch Swiss chard (stems removed) or spinach, leaves finely chopped
1 cup sour cream
2/3 cup mayonnaise
½ tsp lemon juice
½ small onion, shredded
2 tsp finely chopped fresh parsley or 1 of dried parsley
1 tsp chopped chives or garlic chives
¼ tsp salt and pepper
½ tsp onion powder and paprika
DIRECTIONS: Boil chard or spinach leaves for approximately 3 minutes. Strain and rinse with cool water; let sit in strainer for 5-10 minutes, and then blot with paper towel to dry. Add sour cream and mayonnaise, mix well. Add remainder of ingredients and serve warm (or chill and serve cold) with crusty bread or crackers, or use a vegetable dip.
